Swiss Egg with Bacon and Mint

Ingredients

3 Eggs
2 slices of bacon
5-10 small mint leaves
250g of cheddar cheese


Method

  1. Preheat the oven to 180 degrees C. Place 2 slices of cheese half the size of the dish so that the bottom cannot be seen. Place all three of the eggs on top of the cheese and season with salt and pepper. Then fry (or grill) the two peices of bacon and when cooked place on top of the eggs. Place 2 cloves of garlic and the mint leaves to give the dish a boost in rich flavour for 25-30 mins. Once cooked sit back and enjoy!!!.
