Tomatoes Provencale

Ingredients

6 firm tomatoes
4 cloves garlic
2 thyme sprigs
2 rosemary sticks
1 Tbsp crushed coriander seeds
2 Tbsps breadcrumbs
3 Tbsps olive oil
2 Tbsps butter
salt and pepper


Method

  1. Cut the tomatoes into two, salt them and turn them over on a plate to eliminate the water that is formed. Preheat the oven at 160C.
  2. Chop the garlic - mix it with the breadcrumbs and the coriander, the thyme and the rosemary. Cover the tomatoes with the garlic, thyme, rosemary, breadcrumbs mixture; dot with pats of butter over them. Put the tomatoes, flat part upwards, in a dish that can be used in an oven; place in the oven for 45 minutes.
