Turkey Chili
Serves: 2-3
Ingredients
1 lb chopped turkey
1 Tbsps cooking oil
1 cup chopped celery
1 16-oz can tomatoes, cut up
1 15-oz can red kidney beans, drained
1 8-oz can tomato sauce
3/4 cup vegetable juice cocktail, eg tomato
1 bay leaf
2 Tbsps dried minced onion or 1/4 cup fresh diced
1 tsp dried basil, crushed
1/2 tsp bouillon granules or 1 bouillon cube
1/2 tsp ground cumin
1/4 tsp garlic powder or one fresh clove
1/4 tsp crushed red pepper (optional)
1/2 cup water
Method
- In oil cook celery until almost soft. Add turkey, undrained tomatoes, beans, tomato sauce, juice, bay leaf, onion, basil, bouillon, cumin, garlic, red pepper and water. Bring to a boil.
- Reduce heat and simmer uncovered for 20 minutes, stirring occasionally. Discard bay leaf before serving.
