Turkey Chili

Serves: 2-3


Ingredients

1 lb chopped turkey
1 Tbsps cooking oil
1 cup chopped celery
1 16-oz can tomatoes, cut up
1 15-oz can red kidney beans, drained
1 8-oz can tomato sauce
3/4 cup vegetable juice cocktail, eg tomato
1 bay leaf
2 Tbsps dried minced onion or 1/4 cup fresh diced
1 tsp dried basil, crushed
1/2 tsp bouillon granules or 1 bouillon cube
1/2 tsp ground cumin
1/4 tsp garlic powder or one fresh clove
1/4 tsp crushed red pepper (optional)
1/2 cup water


Method

  1. In oil cook celery until almost soft. Add turkey, undrained tomatoes, beans, tomato sauce, juice, bay leaf, onion, basil, bouillon, cumin, garlic, red pepper and water. Bring to a boil.
  2. Reduce heat and simmer uncovered for 20 minutes, stirring occasionally. Discard bay leaf before serving.
